A sweet surprise!

I went out to lunch with my parents today at CPK (California Pizza Kitchen) and yes, I had the Chicken Waldorf Salad...again! LOL I always have that...it's too scrumptious not to!

Anyways, when I arrived back home I had a box waiting for me on my doorstep. How exciting! When I opened it up I had a bunch of cute little cupcake things in it from my Great Grandma Upline Bren Y. Awww! How sweet is that?! I felt so blessed!

Thank you so much Bren for this wonderful gift. I absolutely LOVE it!! I love anything that has to do with cupcakes and being that I've been having issues with my back yesterday and today this really helped to brighten my day. :) I also really love the card you made...so stinkin' cute!! So elegant yet so simple and adorable. :) Thank you thank you!! :)

Dear Blog Journal,
I woke up super sore in my back and shoulders today and even though I started out feeling good...meaning I was feeling like my muscles were bustin' out like I was the Incredible Hulk or something - ha! As the day wore on I noticed that my right shoulder/back started hurting more and more...sorta like it felt when I was laid up this past August. It aches a bit in general but it really gets worse when I drive....OY! So, I'm on the couch with a heat patch and some ibuprofin hoping it won't get any worse. Guess we'll see! Eek!

So, no workout for me today. :(

Dear Blog Journal,
I really enjoyed today's workout, mostly because when I walked in and saw the board it didn't involve any weird exercises and it didn't involve any running for me either...lol.

We were partnered up and did a workout for time. Susan, my partner, did great! We finished with a time of 24:19 (if I remember correctly).

I think the hardest exercise for me to complete were the knees to elbows...OY! I am so going to have man hands like Jami if I keep up all this stuff. LOL I try to put lots of lotion on but I think I'm starting to lose the battle...eek! Oh the price a girl pays to have nice looking arms. ;)

Here is what we did for the Workout:
Skill was: x3
  • KB series of cleans and swings - 4 rounds of 30/30
Workout was:
  • 1000 m Rowing
  • 50 Ring Rows

A bouquet of surprises!

Look how beautiful these flowers are! I especially love the pink ones! :)

Aaron came home from work today and gave me flowers. He said he had such a wonderful time this past weekend just hanging out and doing all of our favorite things like going out for Sushi and Cupcakes, going to the movies, going out to dinner, and everything in between that he decided to surprise me with a little goodie to brighten my day. So beautiful! :)

The movie Coraline

We took the girls to go see Coraline in 3D this afternoon. :)

In my opinion the movie started out very cute...I was thoroughly entertained! I laughed a lot...I'm easily amused, though...and I just thought all the artwork was incredible!

There is this part with the garden that was amazingly beautiful...loved it! And of course the part with the 2 older glam stars was very funny! But then, for me, the movie turned a bit when it started getting "dark"...and at that point I wasn't as entertained and I kept wondering when the movie would end. I also thought that for being rated PG that it was kind of disturbing...especially for young kids. :T

Overall I did like the movie...just not sure that I would want to buy it when it comes out on DVD.

Shopping and Margaritas, FUN!

What a fun day shopping! Well, I can't say we spent the entire day doing this...more like an hour or two...but we still had a lot of fun. :)

We went into a skating/snowboarding type store so that Aaron could check out the long-board and snowboarding equipment. While we were in there browsing the girls and I found this GREAT hat and just had to take pictures. There were also pig hats and bear hats...just so adorable!! I hope the store clerks didn't mind...even though we also didn't buy. *hehehe*
After all the shopping was complete (...I ended up with a pair of jeans one size smaller! Woohoo! And 2 really awesome new t-shirts and one jammie top!) Aaron took me out to dinner. We went to Chevys because we were both craving Chips and Salsa...yum! We had margarita's too...and oh Lordy, after one I couldn't see straight and got the giggles. Typical me really! LOL It was very yummy, though. I haven't had margaritas in a very long time! Can't wait to do it again. :)

I took off like 90!

Dear Blog Journal,
Unfortunately, I've been a little lazy when its come to blogging my workouts the last few days...eek! But not to worry, I'm on top of it today...well sorta. :)

Today was my very first time ever doing "dead-lifts" and I was kinda nervous about it. I started out very light and worked my way all the way up to 90 lbs! Wow! Of course I probably could've done a little bit more but I didn't want to overdo it since I didn't feel comfortable over my form and that sort of thing...but we'll see how things progress as this series of exercises cycles over the next couple of weeks and as I try to get myself comfortable with the correct way of completing these.

My food intake:
Breakfast: 1/2 cup Oatmeal w/ 1 scoop Glutamine & 3/4 scoop Max Pro Vanilla, 1 oz Max Ultra 100 Vitamins
Snack: 1/2 of a protein bar

What a treat!

Today was an exciting day for me! A team member of mine, Maricar H., was in town this week visiting her grandmother in the hospital and we decided to hook up and meet for the very first time over coffee at Starbucks. How fun!

I had such a great time chatting away with Maricar...she is so much fun! She shared with me about her family and we talked in general about just everyday life. I also made sure to get a picture of us taken by a Starbucks employee so that we could document our time together.

Thank you so much for making time out of your tight schedule for us to get together Maricar! I had a fabulous time meeting you and I hope you did too! I hope you enjoyed the cupcakes I brought you as well. Aren't they YUMMY!! :)

Raising the bar!

Dear Blog Journal,
I didn't even post about yesterdays workout...mainly because it wasn't a very good one for me...but that's ok! I'm sure these things will happen to me from time to time but at least I woke up determined to raise the bar today (gotta make the short people jump for it you know! *hehehe*)...a good attitude to have, right? ;)

Well, I didn't expect to be so sore after yesterdays workout...but what was funny is that I didn't realize just how sore I was until I made it into the gym and started doing the first warm-up movement...OY! LOL My body absolutely aches tonight which is fine because I know that I did some good to my body...its definitely getting stronger and leaner and that is so exciting! Looking forward to tomorrows rest day, though...YAY!! :) Here's how today shaped up for me...

Happy Valentines Day!

I hope you had a wonderful Valentines Day ladies!! :)

First off I should make mention that I got my "fab 4" in today...Woohoo! Sushi, Cupcakes, Starbucks, and Martinis! YIPPEE!! Love when that happens! :)

Aaron took me out to dinner at a place called Mama Mia's in downtown Portland and it was so yummy! I haven't had pasta like that in so long so it was a very yummy treat! I had manicotti and Aaron had squash ravioli...which I actually should've had - oh well! But the atmosphere was very nice and we had a very nice time. Would love to go there again some time. :) We took lots of pictures before we headed out to dinner but unfortunately many didn't turn out...I'm so bummed! :( Lighting issues mostly. *sigh*

I wore my Ann Taylor Loft $3.66 hot pink shirt that I bought while I was at the Close To My Heart Album Retreat in Utah a few weeks back. I had so much fun shopping with my friends Amy and Michelle that day and we bought some amazing things for super cheap!! That was such a fun day!! Wish we lived closer so that we could do that again!

Oh, and I also wore my new Brighton bracelet that I got from the Close To My Heart Rewards Your Way Program. Cute huh? I love classy free stuff. :)

Recipe: Tilapia with flavored Rice

Tilapia with Soy Sauce & Pineapple-Scallion Rice
Preparation Time: 18 minutes
Cooking Time: 1 hour, 5 minutes
Serves: 4

**The combination of fiber-rich whole-grain rice and protein-packed tilapia will provide sustained energy, keeping you full for hours.**

Ingredients:
1 cup Brown Rice
4-6 Tilapia Fillets
2 T. Low Sodium Soy Sauce
1 8oz Can no-sugar-added pineapple chunks, roughly chopped and juice reserved
6 Scallions, white and greeen parts, sliced (about 1/2 cup), divided
Olive Oil
Black Pepper
Sea Salt

Directions:
Preheat over to 450 degrees.

Bring 2 cups water to a boil in a small saucepand over high heat. Add rice, reduce heat to low, cover and simmer 50 minutes or until water is absorbed and rice is tender. Remove from heat and steam with lid on for 10 minutes.

Meanwhile, place tilapia fillets in a baking dish coated with cooking spray. In a small bowl, combine soy sauce with 3 T. pineapple juice, then pour over tilapia. Season with pepper, to taste. Bake 15 to 20 minutes, or until cooked through.

Coat a skillet with cooking spray and heat on medium low. Reserve 2 T. green scallion pieces for garnish. Add remaining scallions to skillet and cook for 2 minutes. Add pineapple chunks and cook for 45 seconds. Fold scallion-pineapple mixture into steamed rice, and season with salt and pepper, to taste.

Mount 1 cup rice onto each of 4 plates. Place a tiapia filet off-center over each mound of rice. Drizzle pan juices over fillets, garnish with reserved scallions and serve.

Nutrition Facts: (6oz fillet, 1 cup rice)
Calories: 250
Total Fat: 3.5g
Fiber: 2g
Sugars: 5g
Protein: 37g
Sodium: 460mg

My Comments: This was really good. I would've liked the rice to be more flavorable but all in all I would definitely have this again. It was quick (because we used steamer bags of brown rice) and very easy to make. :)

How to eat a salad

A Dieting Tip: How to eat a salad and experience success.

When you're at a restaurant and faced with all of the yummy salad options here are a few things to keep in mind.

Try to order the salad that is not loaded up with lots of things that your body doesn't need...such as tons of blue cheese, meats, cheese, croutons, etc. While these are always yummy you need to eat these things in moderation and unfortunately the restaurants seem to always specialize in oversized portions.

If you're tempted, like me, to eat some of the yummier salads what I do is I always order the salad with the dressing on the side so that I can dip my fork in it, enjoy 3-4 bites, redip, repeat. After a while you will start to like your salads not completely drenched in salad dressing.

Another thing you can do is to pack your own salad dressing in your purse...such as the salad spritzer style ones.

Try splitting the salad with your friend or order a 1/2 sized salad and try not to worry that the better deal is to get the large salad. Who cares! Save the $2 and save your waistline too! :)

A day of rest

Dear Blog Journal,
Today was my scheduled day off from the gym...and being that the squats over the last couple of days have started taking their toll on my thighs...I'm going to say that this rest was much needed. :) I'm feeling good, though...just a wee bit sore. :)

Yesterday after my workout I had stopped at California Pizza Kitchen for a Chicken Waldorf Salad...it was soooo good that I decided to do the same today. And you know what? It was just as good. :) If you haven't tried it yet I would definitely recommend it. It's yummy! :)

My food intake:
Breakfast: 1/2 cup Oatmeal w/ 1 scoop Glutamine & 3/4 scoop Max Pro Vanilla, 1 oz Max Ultra 100 Vitamins
Snack: 1/2 of a protein bar

600 meters!

Today was another good workout but once again I experienced the stomach cramping...UGH! I don't know if its because I'm pushing myself or what but its just not a great feeling. I noticed it a little bit after the Jingle Jangles but really noticed it the most after rowing 600 meters in 120 seconds! Wowza!

Here is what we did for the Workout:
Skill was:
  • 5 pullups
  • 8 dips
  • 5 kettle bell high pulls on each arm
Workout was: Tabata - 20 sec on/10 sec off 6x
  • Jingle Jangles
  • JPU
  • Rope Snaps
  • Row
  • 2 hand KB swing

Water intake

A Dieting Tip: Make sure you are drinking enough water each day.

I'm probably one of the first people to stand in line and tell you how hard this is because I tend to not drink as much water as I should on a regular basis...but I try! I use to be a Diet Pepsi junkie...loved it! But now whenever I go out I simply order water to drink...sometimes with a lemon. When I'm at home I drink flavored water to give it that little bit of zing. I can honestly say that its been almost 1 1/2 years since I've drank Diet Pepsi and I don't miss it at all! :)

Its important to drink at least eight 8 oz glasses of water a day. By doing this you are replenishing your body and clearing out any toxins that your body is trying to store. You will see a noticeable difference in your complexion and hair which is always a plus...cleaner skin and less hair breakage.

Simply start early in the day and keep a bottle of water with you and you'll be surprised at the amount you can get in. :)

Going Clean...

Dear Blog Journal,
I ate absolutely horrible last week...horrible! From lots of cupcakes in celebration of my Moms b-day (and beyond) to lots of Mexican food which means lots of chips and salsa...gallons probably. LOL So I am back on my diet today and going strong thanks to the help of my wonderful hubby Aaron. :) He has put me on a "clean" diet this week (by my request) which basically means that I am trying not to eat anything that is overly processed or high in sodium and I am trying to make sure to keep up with my water intake. So far so good!

I also really enjoyed today's workout at the gym. It was really fun! I hit a PR in front squats and did the actual workout in 11:07 minutes with 12.5 lb dumbells and a 12# ball for ball slams. Doesn't sound like much but it will be some day. ;) I also want to be sure to say how much I enjoy working out with Erin...she is so nice and I really enjoy talking with her during our workouts too. :)

Oooh, also I tried getting 2 meals in me before my workout this morning plus at least 20 oz of water. I still had the tummy frustrations today BUT it didn't happen until AFTER my workout. I can so handle that! YAY! Lets hope I've correctly dialed in and lets hope it continues to improve. *fingers are crossed*

Tummy Frustrations!

Dear Blog Journal,
I'm getting so frustrated! Every single day that I go to the gym to work out I always seem to get stomach cramps and I'm pretty much throwing my hands up in the air since I don't know what to do about it. I'm fine for a while but then out of no where...well more so during a hard workout...my stomach starts cramping and I just feel like I need to rest until it subsides. I hate feeling that way - this can't be normal because no one else in the gym is complaining about it. :(

Someone told me today that it could be a dehydration thing so next week I am going to try to drink a bottle of water before my workout and also bring a bottle with me. Hopefully that'll do the trick. I'll let you all know. :)

I have a smokers cough & I don't even smoke!

Dear Blog Journal,
Today's workout - OY! Need I say more? LOL It killed me...well close to it since I'm still here to tell about it. LOL

There was some sprinting involved in today's workout and as soon as my lungs hit the 40 degree air outside, OUCHIE!! At least that's what I'm assuming its from. I basically developed a deep, scratchy smokers cough...and I don't even smoke! LOL And, as of tonight I still have the horrible hacky cough that I walked out of the gym with today. It's yucky!! :( I'm so not meant for running...LOL! (did you hear that Nathan and Tina...running is BAD for Shannon!) *big grin - and hint hint hint* ;)

Here is what we did for the Workout:
Skill was: 5x
  • Barbell Push Presses (I think...LOL! Trying to remember off the top of my brain)
  • 8 Ring Rows
Workout was: 3x
  • 250 meter row
  • 20 ball slams
  • sprint to the end of the parking lot

Mmmm! B-day Cupcakes...

Yup! You're lookin' at them! :) These are the yummy cupcakes I picked up for my Mom for her birthday that we celebrated on Groundhogs Day. Don't they look yummy? My mom had requested Cupcake Jones because she loved their Gingerbread ones at Christmas time - I did too, they were Y-U-M-M-Y! I think our favorite ones out of this batch was the Red Velvet. Mmmm! There was also a PB one, a Vanilla one, and then I'm bummed about not being able to remember the 4th flavor in the box. Still very good, though, whatever it was!

Mom - I hope you enjoyed a wonderful birthday this week and I hope you enjoyed your time at the salon when we went yesterday, too. Love you!! :)

85 lb front squats & I didn't even break a nail!

Dear Blog Journal,
Today's workout was a good one for me...tough, but a good one. :) I completed a PR in the front squats with 85 lbs and I didn't even break a nail. ;)~ I also did 8 rounds of the actual workout while really trying to pace myself. So that was pretty cool. :)

I also wanted to say THANK YOU to Jami for coming up to me and giving me some advice about the "letter" I got this weekend. Thank you so much for offering to talk it over with me. I really appreciate it! I'll keep you posted on if I hear anything more. :)

Here is what we did for the Workout:
Skill was:
  • Barbell Front Squats (I did 85 lbs! - new PR): 3-3-3-1-1-1
  • 10 Xchop to halo
Workout was: 15 minutes test - I did 8 rounds
  • 10 push-ups

I love shoes!

Not that all my friends need to know me by anything other than Cupcakes, Lattes, Sushi, and Martinis but did you know that I also love SHOES?! LOL Yup, I am starting to rediscover my love for shoes so I had to share this great shoe that I found yesterday for only $15!! We enjoyed Date Night!

Aaron and I went out on Date Night last night. :) We went back to the restaurant where our first date night took place but unfortunately it was an hour wait and the bar was full...so we wandered next door to the upscale French restaurant and enjoyed a WONDERFUL meal that reminded us of when we were in France. The cheese plate was to die for! :) Afterwards we decided to go shopping and then headed home. We kept it pretty low key but just being together for adult conversation was wonderful. :)
